Meatloaf, are you tired of the same ol’ recipe

I have been subscribing to the Kraft Magazine for about six months now and have found a few good additions to my collection of recipes. Now that I am home all of the time cooking the same ol’ thing over and over again gets monotonous. This month I found a recipe that you can change a couple of ways depending on your mood. Sounds good huh?

Well, you make you meatloaf the same way you always did but instead of putting it into a loaf pan you use your muffin tin and make mini-meatloafs. Then you form indentations in the center of it and you can add different combinations such as:
1. salsa to go Spanish topped of with shredded shredded Mexican style cheese
2, your favorite marinara sauce or pizza sauce to go Italian topped off with Mozzarella Cheese
3. chopped roasted red peppers to go Mediterranean style topped off with Feta Cheese
4. BBQ sauce Topped off with Cheddar cheese
Then bake them for 30 min.
I tried the Spanish style and my family raved about them. I personally like Meatloaf but have a hard time getting the family to enjoy it. They always tollorated it so it was nice to for a change.

They suggested using box stuffing in the meatloaves but some can not tolorate the high sodium content so be careful. Let me know what you think of them or you might have a better suggestion, leave a comment.
